Tarpy’s in Monterey is introducing its new seasonal menu that puts the spotlight on some of fall’s most mouthwatering delicacies — including exquisite pan-seared scallops. Tarpy’s pan-seared scallops star alongside a “mountain” of forbidden rice, which has been infused with a savory fish broth, surrounded by a roasted and pureed red bell pepper vinaigrette, and topped with fried parsley leaves to create a crunchy texture and garnished with parsley and chives. Tarpy’s also features Diver Scallop Crudo, a dish that builds on Chef Ivan’s love for the traditions of the Japanese culture by mixing ingredients from local farms and applying Asian flavors. These scallops are gently tossed with vinegar and onions and placed in the center of the plate in the shape of an angel, tightly nestled together and topped with finely cut strawberries, little dots of sweet-and-savory strawberry aioli, micro greens with super-thin crostini on the side and finished with fresh-cracked black pepper and fleur de sel.
